Coffee Story
This coffee originates from Edido, Yirgacheffe, a region of Ethiopia.
Grown at altitudes between 1,800 and 2,000 metres, the ripened coffee cherries are carefully harvested and then delivered to the Edido mill to be sorted. They are placed on raised drying beds in thin layers and turned periodically (every 2 to 3 hours) to ensure that they are dried uniformly.
The coffee is also covered between 1200h and 1500h when the sun is the strongest, and at night to protect them against rainfall and condensation. After the coffee has reached the optimum level of dryness, they are transported to Addis Ababa, the capital of Ethiopia. There, the coffee is dry-milled, graded, handpicked and sorted, before being bagged for export.
Great for on its own as an Espresso, we enjoy Edido for its juicy blueberry, cherry, nectarine, and sweet floral finish.
