By Danilo Perez, a young producer working in various parts of Huila, Colombia. He owns and oversees the management of numerous farms and expertise particularly in post harvest processing.

He has been experimenting with fermenting coffee in a controlled anaerobic environment where coffee is being held in a vessel without any presence of oxygen during the duration of fermentation.


The fermentation process itself is anaerobic, meaning the yeast and bacteria does the work of fermenting a coffee cherry’s sugar content and oxygen is not needed to be present to successful complete the process.


One of the main benefits of holding the coffee in an oxygen-depleted environment is to slow the fermentation process, which allows a totally different spectrum of flavors to express. This unique fermentation process can take 96 hours or longer, in this case, 120 and 200 hours.
